In my experience, it's safest to ask directly whether they're seeing anyone. (Easy to turn that one into a compliment as well.)
It's so bummer when you learn during or immediately after the fact (i.e., date) that they're fairly committed to another, but were going out either to humor you or to see if you could totally wow them into changing their mind. (I certainly couldn't depend much on the latter, and I'd hate to be the guy encouraging treachery, besides.)
